This healthy lemon slice is gluten free, grain free, dairy free and paleo! It’s made from just 6 ingredients too. The crust is made with a mix of almond flour, collagen and ghee and the light lemon filling is made with just 4 simple ingredients: fresh lemon juice, almond flour, eggs and sweetener. Then bake away! A few hours after the bars chill, you’ll have magic on your hands. They’re perfectly sweet and zesty made for all you lemon lovers.

Paleo Lemon Slice Recipe

Base Ingredients

1 ½ cups almond flour
2 heaped Tbsp Primal Collective Grass-fed Ghee
2 Tbsp Primal Collective Collagen Peptides
1 Tbsp erythritol (or sweetener of your choice)  


Filling Ingredients

3 large organic eggs
2-3 Tbsp erythritol (or sweetener of your choice)
½ cup almond flour
Juice of 2 lemons
Zest of 1 lemon

 





Instructions

  1. Preheat the oven to 180C. Line a bread loaf tin with baking paper.
  2. Blend all the base ingredients together in a food processor until combined.
  3. Press the base mixture into the lined tin evenly.
  4. Place into the oven and bake for 12 minutes, or until a light golden brown.
  5. Remove from the oven and make the filling.
  6. Add all the filling ingredients into the food processor and blitz to combine.
  7. Pour the filling over the top of the base and place it into the oven and bake for 20 minutes.
  8. Remove from the oven and allow it to cool for at least 30 minutes before cutting into squares.
