Keto Indian: Ghee Chicken Curry Recipe

Enjoy this classic Indian meal while sticking to your keto macros.

Prep time: 10 minutes | Cooking time: 25 minutes | Total time: 35 minutes

Serve: 4

Ingredients:

Chicken Marinade:

  • ½ cup coconut yogurt
  • 1 tablespoon mild curry powder
  • 12oz. cubes of pasture raised chicken breasts

Sauce:

  • 60g grass fed ghee
  • ½ tablespoon coconut oil
  • 2 cloves garlic, minced
  • 2 teaspoons ginger, minced
  • Salt and pepper, to taste
  • ¼ cup chicken stock
  • ½ cup unsweetened coconut milk
  • ½ tablespoon Sriracha or similar hot sauce
  • Chopped mint, for garnish or cilantro

Instructions:

  1. Combine coconut yogurt, and curry in a bowl.
  2. Add chicken and toss to combine.
  3. Cover and refrigerate for 1 hour.
  4. Heat ghee and coconut oil in a saucepan over medium-high heat.
  5. Add garlic and ginger.
  6. Cook until fragrant for 1 minute.
  7. Add chicken with the marinade and cook for 5 minutes.
  8. Pour in chicken stock. Simmer for 10 minutes.
  9. Season to taste with salt and pepper and pour in coconut milk and hot sauce.
  10. Simmer for 10 minutes.
  11. Serve warm, garnished with mint or cilantro.
