Believe it or not, this is a banana bread for bacon lovers!

Bacon makes everything better, including this flourless banana bread. The flavours of banana and bacon complement each other and give this recipe a sweet and salty taste.

Prep time: 20mins

Cook time: 35mins

Yield: One loaf

Ā 

Ingredients:

  • 3 ripe bananas
  • 3 organic free-range eggs
  • 1 tsp vanilla powder
  • 1 tbsp coconut nectar (or sweetener of your choice)
  • 2 tbsp Grass Fed GheeĀ or coconut oil
  • 250 g almond flour
  • 1/2 tsp Sea Salt
  • 2 tbsp Chocolate Powder or organic raw cacao powder
  • 1 tsp gluten-free baking powder
  • 4-6 nitrate free bacon strips (~1 cup)

Method:

  1. For the bacon bits, set the oven to bake at 200 °C
  2. Line a pan with the bacon and put it in the oven
  3. Set the timer for 20 minutes.
  4. Remove the pan from the oven and chop crispy bacon into small pieces
  5. Put all wet ingredients (bananas, eggs, vanilla, sweetener, ghee) in a high-speed blender and blend until smooth
  6. Add the almond flour, salt, chocolate powder and baking powder and blend until combined
  7. Set oven to 180°C
  8. Line the base and sides of a 6cm-deep, 20 x 10 cm loaf pan with non-stick baking paper
  9. Pour mix into the lined baking dish
  10. Add the crispy bacon bits to the mix and stir in evenly
  11. Bake at 180 °C for about 35 minutes (baking times may differ depending on your oven so we recommend checking halfway through)
  12. Allow to cool before you slice, serve and enjoy!
