The Lion’s Mane mushroom is one of the most impressive mushrooms in the fungi kingdom. It is an easily recognisable mushroom due to its unique and beautiful appearance of cascading white icicles. Lion's Mane mushroom shows to contain an abundance of bioactive compounds such as erinacines and hericerins. Historically the Lion's Mane mushroom was reserved only for the Royals due to its delicious delicate taste.
The Cordyceps mushroom is an extraordinary mushroom. The use of the mushroom originated in the mountains of Tibet and Nepal and it has since been extensively used in many traditional Asian cultures for centuries. The Cordyceps mushroom is now a well recognised mushroom and it is consumed all over the world. The mushroom contains bioactive compounds such as cordycepin and ergosterol.
The Turkey Tail mushroom is an extremely abundant mushroom found predominantly in temperate forests. The name of the mushroom originates from its appearance, as the mushroom fruiting body resembles the rued feathers of a turkey's tail as it grows on decaying trees. The Turkey Tail mushroom contains bioactive compounds such as Polysaccharopeptide and Polysaccharide Krestin. In traditional Chinese culture the Turkey Tail Mushroom was brewed as a tea or ground into a pure powder, it is now one of the most widely used mushrooms in the world.

The Shiitake mushroom is one of the most popular mushrooms in the world, mainly due to its deep delicious earthy flavours but also because the mushroom contains an abundance of essential vitamins and minerals, as well as many bioactive compounds such as Lentinan. The mushroom has long been used in many East Asian cultures and would traditionally be consumed in soups and broths.

Chaga is one of the most highly regarded fungi and has been used in many baltic countries for hundreds of years. Chaga thrives in colder climates in the Northern Hemisphere and grows as a black hardened mass exclusively on Birch trees. However inside the Chaga conk it boasts a beautiful deep golden colour.
Chaga is thought to have the highest antioxidant capacity of any functional mushroom and contains many bioactive compounds such as inotodiol and betulin.
